    《中国之食文化》系列纪录片,于上世纪八十年代初由日本龟甲万株式会社策划,日本岩波映画制作所制作,于中国完成摄影取材。一共五集,分别介绍了北京,广州,江浙沪和四川这四地的饮食文化以及中式料理的烹饪技艺。这部纪录片中方由当时文化部牵头,各地饮食服务公司及相关店铺配合完成取材。由于此片制作时间距今三十余年,故片中内容、叙述与现今表述可能存在差异,但还是能感受得到这部纪录片的用心。

    意大利人发明了冰激凌,而冰激凌其实只是空气、水和糖的混合物;撒切尔夫人当首相之前是化学家,她最大的发明竟是给冰激凌充气……这一个个让人恍然大悟的小知识,便来自纪录片《流行世界的美食》。   美食是一个永恒的话题,继《舌尖上的中国》后,CCTV9近日陆续推出美食系列纪录片《行走的餐桌》《丝绸之路上的美食》《流行世界的美食》……再次引发“吃货”围观。其中,尤以《流行世界的美食》备受关注。这部纪录片从“炸薯条改变美国”、“比萨影响世界”等角度,讲述移民文化以及美食对世界政治经济的影响,在勾引口水之外,更增长见识,增添乐趣,被观众赞为美食版《教父》、“舌尖上的地球”。□东方今报记者 毛韶华   【长见识】   除了勾引口水,这还是吃货学历史的必备收藏!   这部由BBC制作并在CCTV纪录片频道播出的美食系列纪录片,共有6集,分别讲述流行于世界的6大美食:意式冰激凌、寿司、三明治(汉堡包)、意大利面(还有中、日面食)以及比萨、炸薯条。该片利用走街串巷的方式,既着眼当代流行美食,又回顾历史,许多网友看过该片后评价,有一种经历“世界之旅,历史大巡游”之感。   比如“炸薯条”,看片之前,多数人只知道它是属于快餐店的“垃圾食品”,可不知道的是,它还有着传奇般的前世今生:炸薯条的原料土豆,在原产地秘鲁就有4000多个品种。而西班牙人挖黄金未遂挖了些土豆回去。再后来,法国大革命后,炸薯条成为高档食品。而比利时布鲁塞尔则将世界上第一个股票交易所改建成了炸薯条博物馆,与此同时,炸薯条还在改变着美国……   再看寿司,市场上很多寿司都制作粗糙,但真正新鲜的鱼生和寿司绝对是难敌的美味。从《流行世界的美食》中,人们了解到,为了维护寿司的正统地位,日本曾经成立“寿司警察队”,企图打击世界上那些粗俗的寿司以维护日本的文化形象。   这样的讲述,令《流行世界的美食》带来的知识和感受不仅仅是令人垂涎三尺的美食,更是全方位的知识,是吃货学历史的必备收藏。   【添乐趣】   当月亮在你眼中是一个大比萨时,爱情来临了!   “吃饭时间到了,美国人会想,今天往两片面包里夹点什么呢?中国人会想,今天往火锅汤里煮点什么呢?”类似这样的表述方式,令《流行世界的美食》很明显不是一部乏味的罗列式纪录片。 它在令人长见识的同时,还妙趣横生。   “故事是这样开始的, 从前有个土豆以100公里时速前进从此变成了薯条……”观众小马说,就是这句开场白,一下子就把他给吸引到了电视机前。 而网友骁lock则对三明治的故事中一位“法国美食教授”念念不忘:“他怎么学了个这么好的专业,好幸福的教授,是不是要吃遍天下美食,才算修满学分?期末考试是不是鉴赏美食?”   而最浪漫的是,当人们看到,意大利的传统食品比萨,由意大利移民带到美国,让数百万意大利移民致富,然后美国人又将其做成全世界销量最大的冷冻食品之一,更不得不对比萨饼美食家所总结的“当月亮在你眼中是一个大大的比萨饼时,爱情便来临了”这一观点,深深认可。   【忙对比】   从舌尖讲到“舌根”,这盘“美味”更彻底   在此之前,三明治在人们的印象中,象征着一个无礼和匆忙的时代。然而看了《流行世界的美食》后发现,这些带着流浪感的快餐食物居然不是源自麦当劳的祖宗美国,而是18世纪英国的上流社会。如此种种错位的了解,令观众觉得有趣又有益,而这个片子更很难不火啦。   那它到底有多火呢?看看关注度。   在新浪微博的搜索引擎中输入“流行世界的美食”这几个字,能看到60多万条相关讨论。而事实上,这部纪录片据说在2012年年初便播出过,但没引起广泛关注。直至《舌尖上的中国》横空出世并引发集群效应后,它才彰显出自己的魅力,并被评为《舌尖上的中国》国际版——舌尖上的地球。   这样的结果,从表面来看,是《舌尖上的中国》带红了《流行世界的美食》,可是后者的不少粉丝却坚持认为,从文化角度来讲,《流行世界的美食》讲得更彻底,更加像从舌尖讲到“舌根”。
